Marco Rossi took over the family vineyard at twenty-nine, when his father's knees gave out well before his opinions did, and has made every vintage since. He learned the game from a Danish wine buyer over one long evening in the cellar and recognised the shape of it at once: judgement, weather, and the moment where waiting stops paying. He has read the theory closely enough to know exactly where he disagrees with it. There is one double he turns a roll earlier than the rollout allows, and he has been making it for eleven years, and he can tell you why in a few sentences he has clearly rehearsed. His results with it are, by his own accounting, excellent.
