GG Saleh

Youssef Abdel Saleh runs a koshary stall, rice and lentils and crisp onions, at full noise through the middle of every day, and learned about odds on the craps tables of the coast hotels in his twenties. He plays from behind the counter. A customer arrives, he goes, and the position sits there for anything between forty seconds and a quarter of an hour, and he has never once apologised for it or offered to reschedule. He simply comes back and carries on. The chip games happen after the lunch rush, at the same counter, with the shutters half down. He has lost four matches on time this year and describes every one of them as good business.
