Yui Tanaka apprenticed under her father at the family sushi counter and has run her own eight-seat counter in Shinbashi for twenty years, one of very few women of her generation in the trade. She found this game online during the long quiet of the closures. She would rather lose cleanly than win badly, and she says so. A game she takes because the other player blundered goes into the same mental drawer as a piece of fish served a minute late: it counted, and it was not good work. She plays in fast bursts between the lunch and dinner services, warm with her regulars, and she has never taken longer over a decision than the decision was worth.
