GG Abou Khalil

Nadine Abou Khalil owns a Beirut pastry shop famous for its knafeh, a sweet that must come off the heat at exactly the right second or the whole tray is ruined, and she treats the board clock with the same instinct for economy. She rarely spends her full allowance, moving early out of a baker's habit of never letting anything sit past its moment, and has lost matches to seconds she gave back rather than used. She talks fast and moves faster, leaving little room for anyone to settle. Her shop was her mother's before it was hers. At the table she treats every position like a tray on the heat: read it, act on it, and never let it sit.
