GG Janssens

Thomas Janssens is the youngest brewmaster in his Bruges brewery's hundred-and-forty-year history, promoted at twenty-six when the old master retired and left him a notebook, a chalkboard of timings and a warning about ambition. The game is the tasting room's, played against the cellarman most evenings. He hits everything. Every blot, every time, whether or not the position wants it, and he will tell you before the match that he knows this is not always correct and that he is going to do it anyway. It is the one place in his life where he does not follow the method, and he seems to need it.
