GG Peretz

Noa Peretz has cooked for her kibbutz in the Galilee for twenty-five years, two hundred plates a day and not one of them late. She does not drop. Not out of stubbornness and not because she has misread anything: dropping ends the game, ending the game ends the conversation, and the conversation is the reason she sat down. She will tell you this herself, cheerfully, while taking a cube that is going to cost her. She has fed people for a living long enough to have firm views about anybody who leaves a table early. For the same reason she hardly ever turns it herself. A double invites the other person to leave and she will not be the one handing over the chance, which costs her, as she knows and has had explained to her twice.
