GG Kučera

Tomáš Kučera runs the bar at a specialty cafe in Prague, calibrating the grinder like a violin and pulling shots timed to the second, and customers walk past two other places to reach him. He does not stop doing it to play. Somewhere in every match he goes quiet for ninety seconds while beans are ground, weighed and tamped, and the position simply waits, and then he comes back and blitzes four moves to catch up. He has been asked to schedule around it. He has pointed out, reasonably, that the shop does not schedule around backgammon either. The cafe knows when he is playing because the queue moves at a different speed, and nobody has ever complained about that either.
